The desktop disk installs a system with a deskto pincluding mouse pointer and application windows etc. Server comes with no gui and is much more suited to headless servers as the desktop uses ram which can be plowed into the server's productivity. If you need a desktop OS with a mouse pointer then install the desktop OS.

There is no such thing as a "good model" to follow. Make the OS do what YOU want to do! You are using an OS aimed at choice and freedom and you are asking on a forum what you should do with your system......smacks of microsoft a bit don't you think??

To upgrade to Maverick (I don't advise this if you want a system that works, you should only install it if you want to log bugs to help the development)

Here is a guide:

Hi...

Ubuntu 10.10 Maverick Meerkat is currently in development and is only a Beta release [1]. A current system can be up graded, one way is in a terminal (application/accessories) sudo update-manager -cd

The Ubuntu manual [2] is a good read for newcomers.

And....

Ubuntu Desktop can in theory be converted to Ubuntu server and vice versa. The tasksel command will give conversion options e.g. (in a terminal) sudo tasksel

Also...

Compiling from source is not exactly in Ubuntu's scope. There are however many Linux variations, some of wich can only be built from source and other combine binary packages and source. =)
