Hi Paul,

use the text tool :)
If you cannot find it, click on the tiny triangle at the bottom of the toolbox to show tools that do not fit on your screen.

Inkscape will only remove the text that you ask it to remove.

To delete a text object as a whole, switch to selector tool, select it, then press Del, or Backspace, or Ctrl+X, or right-click on it and select Delete, or select Cut, or use the 'Cut' button in the tool bar.
To delete single letters or words, click into the text with the text tool, then hit Backspace.
