How to erase all drawers (start from scratch again) ?

Hello,
I just install drawers without being familiar with it. I run Ubuntu 14.04, and I got version 13.01 (per the about box) downloaded from the official unstable Ubuntu repo.
Fiddling with it I created a number of things, such as an AppMenu Drawer, other simple drawers.
    Q1) I'd like to erase all drawers and start again from scratch. I have no clue as to how. Can anybody help ?
    Q2) When creating an AppMenu Drawer, I would like to tweak it so I can group various programs in my very own subcategories. How do I do that ?

1) Drawer files are stored in ~/.local/share/applications/ and are named
DRAWERNAME.desktop. Just navigate there with a filebrowser and delete
those. Undock drawers from the unity panel first.

2) AppMenu drawers just display the pre-existing menu structure. You have
to use some other menu editing software (there may be something in
settings; I remember a program called alacarte). The menu structure is
used more on gnome desktops, so you may want to look for a tool from
distros based on that.
