Do you mean tensors as in tensor-valued elements and expressions (like
the strain-rate tensor, anisotropic materials etc)? Or do you mean
tensors as in large sparse tensors of real numbers?

your questions are too broad to be answered directly.
I suggest you follow the tutorial in the beginning of the
upcoming book, pick the latest version from here:
  http://fenicsproject.org/pub/book/book/
There you will see, step by step, how to use many
of the features available in the FEniCS project.

In addition to the tutorial, there are many chapters
with details about all parts of FEniCS and lots of
application chapters you can look at for examples.

When you've been through the tutorial, you can ask
more specific questions here about your problems.
