With regards to the addition of quotes, is it possible to exclude specific tags? i.e. -faith,-God

Nope. Filters there are inclusive only.

But if you are fine with some simple Python programming, quote fetching is pluginnable and it is easy to take one of the existing plugins and modify it to filter out quotes with specific words: http://peterlevi.com/variety/wiki/Writing_plugins

just a word about quotes.
I've a personnale plugin for quotes but i don't know were i can share it.

Is there a place to upload the quotes plugins ?

Probably best for now is to provide a link in the Wiki: http://peterlevi.com/variety/wiki/Plugins.
And at some point I will make this more easily discoverable.

If the plugin is of interest to the general public, at some point I can merge it into the main tree and include it by default.

This plugin display quotes from the ChuckNorrisFacts.fr site.

I've to write now a plugin for the english version ;-)
