Nope, this won't be supported any time soon. Variety does not draw the wallpaper, it just instructs the desktop environment what image to set as wallpaper. Most desktop environments, including GNOME and Unity (which is based on GNOME) do NOT support different wallpapers per monitor or per workspace. As a consequence, there is no decent way to support this in Variety.
Variety is pretty hackable, so under DEs that do support this (like XFCE), it is doable, but will not be supported out-of-the-box:
