how to get the old "places - system", i.e. all disks

how to get the old "places - system", i.e. all disks / partitions including the usb sticks to unmount them, when using unity?

You can use left panel (aka “sidebar”) of Nautilus to unmount drives and partitions, or right-click the drive’s button in Unity launcher and select “Unmount”.
