Is this possible to set the keyboard layout (for example fr_CH) like we can do for the language at the boot menu ?

No. Why would you need different keyboard layout at the boot menu anyway?

I don't need an other keyboard layout. I just want to create a live USB ISO in french only with the fr_CH keyboard layout.

So you want to change language, not keyboard. You can do that using UCK gui easily.

I'd like to have AZERTY instead of QWERTY ... now I have to wait 5 minutes to boot and change keyboard layout ...
