is it possible to make a desktop icon for the gui so that users don't have to go into the terminal. And if so how would one do it?

There is no such option in GUI currently.
You can do it by modifying "customize" script in "customization-profiles/localized_cd/" subdirectory to copy shortcut into /home/ubuntu/Desktop (in KDE, I don't know what directory is appropriate for Gnome). Please note that the shortcut must be first copied to "customization-profiles/localized_cd/" before starting CD build, as only then it will be copied to chroot environment.

i had the same problem and found a solution here:

appearently you can ćhange the script which adds the user and his desktop-directory:
sudo nano edit/usr/share/initramfs-tools/scripts/casper-bottom/10adduser
