You have to be aware that Ubuntu is copying packages from Debian, and also Debian has only version 5.1.0, see https://tracker.debian.org/pkg/yubioath-desktop

For an Update in Ubuntu Debian has to do the update first.

If there are important improvements with the new version, then please create a SRU request in Ubuntu's bug tracker and another update request in the Debian bug tracker.
