gnucash currently doesn't include a .desktop file which allows it to show up in the menu.

You can start gnucash by going to a terminal (applications->accessories) and typing 'gnucash' or you can add it to the menu by following the steps in https://help.ubuntu.com/ubuntu/desktopguide/C/desktop-tips.html#menu-editing using "gnucash" as the command.
