I installed xkeycaps, and it shows up as installed software, but I can't find it in the applications menu anywhere so I can't figure out how to run it.

Assuming you are using a gnome desktop, press Alt+F2 to bring up the "run" dialog. Then type "xkeycaps". Alternatively, press the key combination Ctrl+Alt+T then type "xkeycaps"

Thanks! I wish Ubuntu would commit to GUI. Next time I need this application I won't remember what it's called or probably that I ever had it. If it would simply show up in my "Accessories" or "System tools" or something them my memory would likely be triggered and I'd remember how handy this utility was the last time I needed it.

Its probably an oversight by the package maintainer. You can file a bug to request that it gets fixed, or ask for an explanation as to why it is not there.
