Is there an option to save channels and which server they are on?

It's somewhat hidden, open the Network List from Xchat->Network List or with the Ctrl-S hotkey. Select the network you want to save, choose 'edit' and place the channels in the 'Channels to join' entry box.

yes thank you that solved the problem, but i had to find the server name and add it (took some time)

Using XChat 2.8.6 with the channel switcher preference set to 'tabs' you can simply right-click the channel name and the context menu will offer an option to save it as a favourite.

The reverse is also true. Right-clicking the tab on a saved channel will offer the opportunity to remove the channel from the favourites list.
