It doesn't work in Wine:

The only real way to run it is the run closed source virtualbox (for native usb access) and install Windows to the virtualbox (needs a valid install media and license). You can then use iTunes there.

You may be able to transfer music etc to the device using Rhythmnbox, Banshee or Amarok but it doesn't have any of the other features in iTunes.
