you can go under the wine menu and click on uninstall program. i find that doesn't always work. you can always delete the programs from ubuntu. i've never had any problems with that.

anyways, you're using ubuntu ultimate. they won't help you?

As Marcus said the programs can usually be un-installed by simply deleting them from where-ever they are in the Wine folder which is somewhere like

/home/usernam/.wine
