Using UBUNTU as Raid-5 NAS Server

1. Is there a list of SATA RAID controllers that work with the current UBUNTU?
2. Is it wise to install UBUNTU on a jbod drive when a raid array is available?
3. Is there documentation on the setup / care and feeding of soft raid arrays with UBUNTU? Where?
With NAS boxes and enclosures going for high prices, why wouldn't making one with UBUNTU be a good idea?

https://help.ubuntu.com/community/Installation/SoftwareRAID provides some data.
You can also install FreeNAS software to dedicate a PC as a NAS.
