Storing Files on Ubuntu USB Drive

Thanks for reading the following.
I'm thinking of installing Ubuntu 10.10 32 bit on a USB Flash Drive, so I can have it anywhere.
I was wondering though if it was possible to store files that you created on Ubuntu to the USB drive, or if they were deleted when you rebooted?
If you don't understand my question, I'll explain. If you're running Ubuntu off of a USB Flash Drive(mine is 200GB), and you have an OpenOffice document you just created to the desktop, and you reboot. Would it keep the file, or would it be deleted upon the reboot?

you have a 200 gig flash drive? the largest i've seen is only 128 gig, and that costs like $500.

you can save anything you want on the flash drive and it'll still be there. however, if you want to save settings so you don't have to reset the programs everytime you reboot, you'll have to enable persistence when you install ubuntu on the flash drive.

You've never seen higher than a 128 GB External Drive? You haven't been looking mate. They're cheep. You can get a 2TB for around four hundred.
Anywho, how do you enable persistence? Under the system settings, I'm guessing?

1) Are you installing a live cd iso image on USB drive, for example using usb-creator-gtk

or

2) Are you installing directly onto the USB drive.
