modify boot menu

hi,
   I create a system ubuntu 12.10 on my usb pendrive

I ask you if is possible to modify the standard boot menu...
(add or remove entries)

or if is possible install grub on that installation

You can remove the old kernels listed in grub by uninstalling the packages in software centre or apt-get. Part of the post uninstall is to remove itself from grub.

What other edits do you wish to do?

when I boot from usb I view:

1) http://digilander.libero.it/sacarde/np/usb-ubu1.png

and then

2) http://digilander.libero.it/sacarde/np/usb-ubu2.png

I would like bypass first window and edit second menu

is this possible?

Hi sacarde,
here is another good (and better IMHO) way to achieve your goal.
Boot Ubuntu directly from Grub. No usb-sticks or anything. Also you can create a casper-rw partition to store your data.
