Hmm... the difference between the desktop and the server edition isn't too, I think it's only packages installed and a little bit. So I guess that you can easly run this command for install the GUI:
sudo apt-get install ubuntu-desktop

I don't think that you can change a server edition into a desktop edition. You should remove all the packages that the server edition have and probably change the respository.
