How do I remove Unity & replace with previous?

I don't like they desktop layout, how to i restore my previous desktop layout?

Ubuntu 11.10 uses GNOME 3 with the !unity shell by default. To use
GNOME Shell instead, install the "gnome-shell" package andi nvestigate
"gnome-tweak-tool". For GNOME Fallback mode, which is similar to GNOME
2, install "gnome-panel". Both packages will place entries in the
Sessions drowpdown

I don't see whats in these programs that sloves my problem. It books to the default and the odd floating bar is still on the left that I want removed.

Ops...it boots to default and it still has the floating-bar on the left side. I want it removed.

Ok for further reference, if anyone wants to remove that annoying Unity Launch panel heres how:
1. open a terminal window
2. type: sudo apt-get install compizconfig-settings-manager

This will install a program to modify Unity

3. In the terminal now run:
ccsm -p "unityshell"

sudo apt-get install gnome-session-fallback gnome-panel

Log off then log into the new session
