Upgraded to 11.04. Everything seems slower- from start-up to actual use. what gives?

Had you tried using Ubuntu Classic Desktop (GNOME)? It's much faster if you have an old hardware (Or better yet stick with 10.04 or 10.10). If you still can't resist the impulse of trying the Unity, install Unity 2D instead and compare the difference:

sudo apt-get install unity-2d
