I am completely lost with the 11.04 interface.

I am completely lost with the 11.04 interface. I can't find how to go back to the 10.10 version. Should I entirely delete my 11.04 to install a 10.04 and then upgrade to 10.10?

No!

You still have "gnome classic". Logout. Then click on your name. See the the task bar at the bottom of the Log In screen? It might say something like "USA" "English" "Ubuntu". Click the 'up/down' arrow by "Ubuntu" and simply select "Ubuntu Classic". That's gnome 2.32.1.
