rollback to 11.x? any way to get a list of apps ?

We upgraded to 12.4 from 11 and are disappointed - to say the least. We hope the developers have not taken Ubuntu one step in the wrong direction,
Anyway, is there a way to :

1. Roll back to the 11.x version without a complete reinstall and loss of all of our config?

2. Is there a way to use drop down lists instead of the hundreds of icons displayed from the "dash" meny item? This is really a pain and the major reason for our dislike.

Sorry to be so pessimistic, but we really don't like the direction that Ubuntu is headed.
Please don't respond with advice telling us to use another system like Fedora, we already know that.

As I have said a billion times (perhaps literally), YOU DON'T HAVE TO USE UNITY.

There are plenty of Alternatives Like KDE, XFCE, LXDE and so forth. I hate:

Firefox
VNC (Vinagre, Vino)
Thunderbird
Gedit
All the default dumb games

Yet I don't post stuff like this. I just remove what I dislike and install what I prefer. It's not that hard. The desktop is no different.

Gnome is not the only desktop and you don't have to use Unity. You can use Gnome shell which is the official default shell in Gnome3, the old shell was gnome-panel which that guide advises to use.

The OS is fine, the defaults may not be 100% to your liking, but guess what, it's not to a LOT of people's liking. It's called life.
