Hi Cédric - Salut Cédric

To add a language to the menu of the live CD, action should be taken elsewhere, maybe with the people managing Ubiquity ?
I don't knox exactly.

However it is maybe easier, for the time being, to install Ubuntu with the selection of a major language, like English or French, and, once it is installed, to add the Occitan language from the Language-support manager.

An other way to do is to try using Ubuntu customization kit (UCK installable from software center) and produce a customized version with the Occitan language added. I did it in the past for the Vietnamese language, along with English and French.

I do not answer directly to your question but I hope that helped.
