which iso image to download

I have a laptop with I7 64-bit Intel processor, which iso image should I download and install?

The 64 bit version. The 32 bit version is "recommended" to people who don't know what CPU architecture they are using.

You can then choose between the LTS "long term support" version, or the latest version. The difference is that the LTS will have older packages, but is more focussed on stability, whereas the latest version is more focussed on newer features. From an end users point of view, the latest version uses the "unity" desktop environment out-of-the-box, whereas the LTS uses the more traditional "Gnome 2" environment

The support dates are on the wiki page. As we are late in the LTS cycle, the LTS and the latest version "Oneiric" is supported until 2013-04.

So, does it matter if the CPU is Intel I7 as opposed to AMD? Will "ubuntu-11.10-desktop-amd64.iso" still install and run correctly on Intel I7 CPU machine?

Yes, use the amd64 iso. Amd64 is the name of a particular instruction set that targets modern 64 bit CPUs.

It's named AMD for historical reason, but it applies to Intel.
Right, the name is badly chosen.
