The latest LTS release for ubuntu server is available here:
https://help.ubuntu.com/10.04/serverguide/C/index.html

Note that the server version of ubuntu simply means that it is optimised for command line access - i.e. no graphical desktop will be installed by default. If you are unfamiliar with this form of system administration, you can also use the desktop install, but it is just that a different set of packages will be installed by default.
