How to install Ubuntu desktop without having it load on startup?

How can I install Ubuntu desktop(from the desktop version of Ubuntu) on Ubuntu Server 11 without having it load the GUI on startup?

You can install ubuntu-desktop and get the desktop UI. You can add the boot option 'text' and it will boot to text based only. If you wanted the desktop OS, why install server?
