What version of Ubuntu should I install on a Dell Latitude C810 - Pentium III 1.13Ghz/733 Mhz, 512MB Ram, 30GB Hard Drive laptop?

Standard Ubuntu might run a bit slow on your 512MB RAM but still, it'd run.

If you want to use your machine to its full capabilities, I would suggest a light-weight Ubuntu Fork i.e, Lubuntu.
