Headless thunderbird to GUI

I execute thunderbird in headless mode using the --headless option on startup. When I get an email notification, how can I then activate the GUI of thunderbird to view and respond to the email and then go back to headless mode? Ideally, thunderbird would startup in headless mode as a startup application, when I get an email I would see a notification popup, I could open up the GUI somehow (perhaps by clicking on the notification?), respond to the email, then close the GUI and have thunderbird run in headless mode again until the next notification pops up.
I'm running thunderbird 78.8.1 on Ubuntu 21.04 hirsute, Desktop Environment is GNOME 3.38.5 with window manager BudgieWM.
