Setting default scan format

How can I set the JPG format as a default first-choice format for scanning? I look all over settings, but there is no option for that.

What I wan:
1. Run PC / scanner
2. Run Simple Scan
3. Scan image
4. Save as JPG

There are several part-time workers working on this PC, so I need to be sure, that it is set to JPG as default - some of them can't change the extension while saving.

How can I do this?

My current version of Simple Scan is 3.28.0, and the environment is Ubuntu 18.04.1 LTS with XFCE

To be sure, you understand my question well. Current seting on your lates
version of SimpleScan is set to scan in PDF format as default There is no
option to change this (or impsible to find this option , I also searched
the web, without success).

So how can I be sure, that several different people working on the same PC
have always result in JPG?
They are not advanced skilled in work with PC, so they use only ready-to-go
options. I want set and save the option to JPG and this will cover all my
needs for future.
