scan file to pdf readable in ebooks

I am using Ubuntu 11.04 and have tried all the scanner programs in Ubuntu software (ie simple scan and gscan2pdf). The problem is their output is like a picture and thus difficult to use on my android phone. Is there a program that will output in a text like output. For example I can download a pdf file from Tech Republic and it can be read (text to voice) on my droid. I scan a lot of magazine articles I would like to use on my droid.
Any help would be greatly appreciated.

Simple Scan has two modes for scanning - text and picture. The text mode produces much lower quality pdf's but may be more suitable for your purposes.

I think what G_Ellington really is looking for is OCR (Optical Character Detection), aka "Text Recognition). This is not supported in Simple-Scan at the moment.

Or just search for "ubuntu ocr" or "linux ocr" using a search engine.
