how do i save a simple scan in other format (like .doc, .xdoc, .word) besides .jpg? I need to submit copies of my unofficial transcripts and i won't accept jpg files. help.

I really don't my about file extensions and what can or can't be exported. I tried to export a .jpg file into .pdf but it's not readable. As I said, I need to submit copies of my transcripts and the university won't accept hard copies and the issuing university won't provide me with a digital document. please help.
