Hold shift at boot, select recovery mode and then select root. You can then run:

cd /home;ls

ls == lowercase LS

you can now see the available usernames. You can now run:

passwd foo

replace foo with your desired username

If you now run:
reboot

You can let the boot run as normal and login as foo with the password you set.
