Would combining at-home VPN (same IP) with proxy provide the same benefits as third-party VPN?

This is more information than technical support, but I was wondering if literally just using OpenVPN going from one ubuntu laptop to an ubuntu server on the same wifi network would provide the encryption necessary.

Second, if I then use a proxy to hide my IP address, would it have the same security as a third-party VPN service? Would this be more, or less secure?

Finally if I can simply configure openvpn to mask my IP instead of a proxy, how would I do that?

If it's only on the same LAN then the only thing you gain is all your traffic comes from one system in the network.

Why all the paranoia?

Using a 3rd party VPN online just switches one unknown network (the Internet) for another (the VPN service). How do you know that the VPN service isn't spying on you as well?

Thanks. I was building a home network just to learn how, and wondering what I could do with it for internet anonymity as a project. But I'd mostly just be using the VPN to connect and access the web from a trusted connection in cafes and such.
