OO Draw: How to create new Symbol Shapes?

I am new to OpenOffice and I would like to create some new Symbol Shapes for OO Draw to represent pneumatic valves for the purpose of making pneumatic drawings but I can't find how to do it in the OO Help. Are there instructions on how to do this? I don't want to create the symbols over again from basic shapes every time.

You can combine basic shapes - there are instructions in Help that tell you how to do this. Call up Help then choose the Contents tab > Presentations and Drawings > Objects, Graphics and Bitmaps > Combining Objects and Constructing Shapes.

When you have the shapes you want, you can save them in the Gallery. Select the shape, right click and Save as Picture. You will probably want to create a folder to save your shapes in. Open the Gallery (Tools > Gallery) and I suggest you create a 'New Theme...' with an appropriate name. Open the folder you saved your shapes in and drag and drop the shapes into the gallery window. You can then drag and drop them into a Drawing whenever you want them.

Of course, you can put whatever pictures you want in the Gallery, so you could draw shapes using GIMP, for instance, and use them in you Drawings.
