Hi!

There is a lot of documentation for OpenOffice.org hidden inside their "Projects" page. You might start at http://documentation.openoffice.org/ with first selecting your desired language.
Creating charts is explained pretty well in the OOoAuthors User's Guide, the English version is available at http://documentation.openoffice.org/manuals/oooauthors2/index.html (read chapter 4 of the Calc guide on this page).

To create the chart quickly, open up Calc and repeat the following steps:
1) Click at cell A1 and enter "Date"
1) Click at cell A2 and enter "2007-05-07"
2) Click at cell A3 and enter "2007-05-08"
3) Mark both cells A2 and A3 by clicking and holding the left mouse button on cell A2, moving the mouse to cell A3 and then releasing the mouse button.
4) Both cells should now have a black background and there is a small box at the lower right corner. Point on that box and click and hold your mouse button again. Move to cell A16 and you get all dates up to today +14 days.
5) You can enter your weight into the B column cells. Enter "Weight" into cell B1 and today's weight into B2, leave the others empty.
6) Mark cells A1 to B16 with the technique described in step 3). From the main menu, select Insert -> Chart...
7) Check the boxes "First row as label" and "First column as label" and click on the "Next >" button
8) Select the chart type. You might want either a line chart or a bar chart. Select that "Columns" box next to "Data series in". Click the "Next >" button.
9) You may now select a chart variant. Select "Symbols" for the line chart and "Normal" if you chose the bar chart. You may now click on the "Create" button.
10) You may create as many charts as you want by repeating steps 6) to 9).

All charts are updated shortly after entering new weights into the B-column next to the corresponding date (be sure to press the enter button).
