difficulty opening PDF files. (2000+ pages of code)

When I try to open PDF files, I get asked to enter four properties: character set, default fonts, language, and paragraph break. I have no idea what to do with the first question and am confused about why it is asking any of them. If I just hit OK, I occassionally (depending on each individual file I think) get thousands of pages of code and white space. Character set is set to "Unicode (UTF-8)" by default but I don't know what that means. Please help. I hate having to use adobe anything and I'd rather not install Wine on this machine if I can avoid it.

The PDF's are from other OS ?

if yes is the answer set the Codification to other, the codification of the OS where come from the PDF.
Windows uses ISO-8859-1

If you have +2.000 pages on the PDF, and includes images, check your hardware specifications,
may take a while to open them correctly on Evince, and more time on Adobe's PDF Reader.
