OpenOffice.org 3.0 wasn't ready when packages where frozen for 8.10 release.
There are ways to install 3.0 on intrepid like using custom repositories, but are not supported.

Sorry, but the OOo version in intrepid is still 2.4

Unfortunately 3.0 final release came out after or very close to the Feature Freeze date.

Although it will not be made available in the standard repositories, it may find its way into the backport repository. Here is some information regarding the backports.
https://help.ubuntu.com/community/UbuntuBackports

You although the backport page has not been updated with the intrepid information. You can file a request to backport Openoffice here:
https://bugs.launchpad.net/intrepid-backports

Also you can download and install version 3.0 from OOo website. Please review the installation instruction and remember to uninstall your current 2.4 version before trying to install.

Hope this helps
