If you look at https://launchpad.net/ubuntu/+source/openjdk-8 you may see that a package with version 8u372 has not yet been created.

You have to be aware that the openjdk-8 package is in the "universe" category. That means that it is community maintained. Everybody (including you) is invited to help preparing the package.

Remark:
Which Ubuntu release are you running?
There seem to be already PPAs with that version for selected Ubuntu releases, see https://launchpad.net/ubuntu/+ppas?name_filter=openjdk-8 for a list of potential candidates.
