Sounds like you don't like the Unity desktop. You are not alone, lots of people do like it but like you I'm not one of them.

Luckily you don't have to stick with it there are other desktops

You may want to try one of the other official *buntu releases which have a different desktop.

Such as

Lubuntu: the lightest, fastest release.
http://lubuntu.net/

Xubuntu: Still light but more like the Ubuntu of 10.04 era
http://xubuntu.org/getxubuntu/

Kubuntu: if you like the KDE desktop
http://www.kubuntu.org/getkubuntu

Ubuntu Gnome
http://ubuntugnome.org/download/

You can try any of these from a live CD/DVD or USB and install the one you prefer most.

They are all fully supported here and on AskUbuntu

Alternatively you can go back to the "Classic" Desktop as described here

Many thanks - a very comprehensive reply which I've been exploring.
I've decided to put up with Unity until Tahir is available then see if the promise of a choice of 'classic' desktop really is available.
