How to find 'Edit' in file manager window

I'm trying to find out how to change the file manager (folder) options in Ubuntu 12.04. The Ubuntu Desktop Guide says this:

File manager behavior preferences
You can control whether you single-click or double-click files, whether folders are opened in new windows, how executable text files are handled, and the trash behavior. In any file manager window, click Edit ▸ Preferences and select the Behavior tab.

However, I cannot even find the Edit button. What am I missing here?

Give your file manager focus and Alt + E

Thanks. I'm still getting used to the desktop interface. Just installed this yesterday. It was a struggle just to open a terminal the first time. But now I know.
