Do only files of a certain type open with EoG, or do files of *all* different types (e.g. text documents, videos, spreadsheets) open with EoG?

You can change the application that opens any particular type of file by right-clicking on the icon representing the file and clicking Open With Other Application. When the Open With window comes up, select the application that you want to use, and make sure the "Remember this application for ..." box is checked (then files of that type will always be opened by that application in the future).

On the other hand, if EoG is opening files of *all* types (which I want to emphasize is *very* unlikely), then it would be rather cumbersome to manually reset what application opens files of each type, so in that case, you may want to try editing the file called ".local/share/applications/mimeapps.list" relative to your home directory (which you can do by pressing Alt+F2, pasting in "gedit ~/.local/share/applications/mimeapps.list" without the quotes and pressing enter), and remove each instance of "eog.desktop;".
