No longer kernel-package: How to build kernel?

There is no longer a package called kernel-package and thus no make-kpkg in 21.04 and 21.10
Please can you tell me how I build a custom kernel (ie generate the *.deb) from the Ubuntu Kernel Sources
And point me to any updated documentation.

OK, I missed that make help refers to make deb-pkg and make bindeb-pkg
But its not easy to use as any changes causes the whole build process to start again
