Install Ubuntu on VMware ESX Server

I am very green with Linux but would like to start using it. I recently went to a training for Moodle.org and the instructor had 7.10 running on the free version of VMware. I came back and am trying to install it on my VMware ESX server with no luck. After reading some threads I see that JeOS needs IDE and we only get SCSI with ESX. Has anyone got Ubuntu 7.10 or jeOS up and running on a VMware server? If so how?
