hide or reorder listed fonts?

When I start up the ap, I am faced with a selection of arabic characters I never use. All I need are latin, greek, common. How can I hide the rest?

There is no support yet to selectively view specific languages.

There is the option to view language groups or Unicode groups (under View/), however this setting cannot be saved yet when you re-open Character Map. It is something being worked on.

You can search existing feature enhancements for gucharmap at http://bugzilla.gnome.org/browse.cgi?product=gucharmap

If your request matches any of the existing features enhancements, please post a reply there mentioning that you are also interested for the feature. This helps prioritize.
