From these entries I only see one Operating system installed on your computer... Ubuntu 8.04 on /dev/sda1
The multiples entry are there because of deferent kernel version. When a new kernel is installed (though updates) a new entry is created.
This ways you can always load older kernel if you wish to or if something goes wrong with the newer version.

Really it isn't a problem to leave them there. However if you prefer them not to be show you can.

I recommend you don't edit your /boot/grub/menu.lst manualy unless you know what you are doing.
There is a tool called "Startup manager". It will let you easily configure Grub to your liking.
You'll find it under Add/Remove Applications.
(it will appear in System > Administration once installed)

If you really want to remove old kernels I find it easiest to use synaptic, search for linux-image and mark old ones ffor removal - it will also during removal clear old entries from the menu list.

I would always make sure you have the current and previous kernels - if you get problems you can still revert to older versions to sort out problems.
