Is it possible to remove the date/time from the top bar?

Hi,
I've been enjoying Ubuntu desktops for more than a dozen years and appreciate all the work that goes into maintaining their functionality. I'm currently using Ubuntu 18.04 with Gnome.
From time to time I do need a bit more control over my desktop configuration than seems available. I would, for instance, like to remove the date/time controls in the Setting dialog only allow me to enable automatic TZ and date/time updates and to choose a time format. The Top Bar section of the Tweaks extension adds control over whether the date and seconds are displayed, but there's no control over the day of the week and the time themselves.
Does anyone have any suggestions?
