Why are there three entries for preferences in the menus?

First off, there are two preference entries in the menus in 3.14.2.
One is under the Terminal header, and there’s another under Edit.

Secondly, shouldn't the profile settings be included under the preferences?

I suggest you report a bug. Vivid is not ready and not stable

We are working on this (https://bugzilla.gnome.org/show_bug.cgi?id=722114), expected to land in gnome-terminal 3.30 (most likely shipped by Ubuntu 18.10).

Actually the aforementioned change (merging the Preferences and Profile Preferences windows to one) has made it to gnome-terminal 3.28 (most likely / hopefully shipped by Ubuntu 18.04 LTS).

Furthermore, we've removed the leftmost Terminal menu entry for Unity users, this means there'll be 1 Preferences entry instead of 3 on Unity (which is by the way no longer Ubuntu's default desktop, so this fix is probably less relevant now).
