What is the output of:

dmesg | grep -i firm

If your WiFi uses firmware then there may be a newer version. The command will show it being loaded. Seems your wireless uses the ath9k driver.

Your Terminal output shows several issues:

1)

              Channel:1
                    Frequency:2.412 GHz (Channel 1)
lo Interface doesn't support scanning.

enp2s0f0 Interface doesn't support scanning.

                    ESSID:"Connexin-Broadband"
                    Channel:1
                    Frequency:2.412 GHz (Channel 1)
                    ESSID:"ZyXEL_1C2C"
                    Channel:1
                    Frequency:2.412 GHz (Channel 1)
                    ESSID:"HP-Print-41-Deskjet 3520 series"
                    Channel:6
                    Frequency:2.437 GHz (Channel 6)
                    ESSID:"ZyXEL_488C"
                    Channel:6
                    Frequency:2.437 GHz (Channel 6)
                    ESSID:"Thomson052FFA"
                    Channel:11
                    Frequency:2.462 GHz (Channel 11)
                    ESSID:"AndroidAP"

In order to avoid wireless interference from other wireless access
points, I suggest logging into the homepage of your wireless router and
changing the wireless transmission channel to channel 3.

2)

wlp3s0 IEEE 802.11bgn ESSID:"Connexin-Broadband"
          Mode:Managed Frequency:2.412 GHz Access Point: 18:A6:F7:C0:0F:18
          Bit Rate=115.6 Mb/s Tx-Power=16 dBm

In order to stabilize your wireless connection, I suggest logging into the homepage of your wireless router and changing the wireless transmission speed to 54 Mb/s (Wireless-G speed)

3)

Linux luis-EasyNote-TS11HR 4.4.0-93-generic #116-Ubuntu SMP Fri Aug 11 21:17:51 UTC 2017 x86_64 x86_64 x86_64 GNU/Linux

You are using a relatively older kernel version (4.4.0)

I suggest running the following Terminal commands (use copy-paste to avoid typing mistakes) to install a newer kernel version (4.11):

sudo apt-get update

sudo apt-get install linux-headers-4.11.0-14-generic

sudo apt-get install linux-image-4.11.0-14-generic

sudo apt-get install linux-image-extra-4.11.0-14-generic

===============================================

Then reboot the router, reboot your PC and then retest wireless.

Thanks a lot for taking the time to answer my question. With regards to the kernel thanks, I though I was up to date and didn't realise I had to install them manually. I eventually solved the problem myself by simply restarting the network manager (sudo service network-manager restart). Although less technical, it worked fine, all I needed was a way to get the wifi working again without restarting my computer.
