This may be possible with an edit to xorg.conf. If you want to try this, paste your current one here so we can see what it has and refer to it. It is at /etc/X11/xorg.conf.

it should be possible at the easy way. System -> Preferencies -> Screen Resolution
There should be an option to change the refresh rate, if thats what you mean :D

Open places-
If you want to edit it you will need to type in terminal:
sudo gedit /etc/X11/xorg.conf
You can add resolutions there, as well as define your monitors horizontal and vertical refresh rates, what really allows to set higher resolutions than those autodetected.
Consult your manual for these rates (entering too high can damage your display). Also make a copy of xorg.conf before you edit it:
sudo cp /etc/X11/xorg.conf /etc/X11/

You are in luck, you don't need to find out any refresh rates for your monitor.
This line:
Modes "1280x960@60" "1280x1024@60" "1280x1024@75" "1280x960@75" "1152x864@75" "1400x1050@60" "1024x768@60" "1600x1200@65" "1024x768@70" "1600x1200@60" "1024x768@75" "832x624@75" "800x600@60" "800x600@75" "800x600@72" "800x600@56" "640x480@75" "640x480@72" "640x480@60"
has all of the modes that you can switch between (XXXxYYY@FREQ).
You can do this via the keyboard with: control+
(hold down control, alt, and the either the + or - key on your keypad).
I don't think the mode you select this way will stick with you when you log out and back in (or over a restart), but you can try it.
You can edit this line as well and put only the modes you want. I have mine trimmed down to the one and only one I want. If you do this, take wrwrwr's advice and make a copy of the file in case you make a syntax error. Then you'll have something like this, probably, unless you want a higher resolution:
Modes "1280x960@75"

UPDATE, I was able to get the original drivers installed and working from ATI.
its a bit tricky but heres how I did it.
I wound up havening to reformat any ways.
I already had the drivers down loaded from ATI's sight
http://
Heres what I did I simply followed the instructions as I was down loading X.
I saved the file to an SD card should something happen and I had to reinstall ..
I did this 3x and it worked like a charm.
I opened the console and use sudo - s as it is my config for super user
and I am doing all this after the up dates taken place and with out a restart.
Next I dragged and drop the thee driver file to terminal.
that initiated the process..
the graphic came up and I selected auto install. once I got a blue box that appeared. it is a graphical depiction
of updating...the weird thing is if you have to many windows open you can't find it.
at any rate I followed the instructions on it. the "blue box graphical" setup.
and just went through it all and bada bing bada boom bada bam. it completed the set up.
still had success even if I didnt get the blue box...after gutsy finally down loaded..
I selected the ATIi Drivers and it down loaded some files...then i restarted the entire machine.
and bingo...there it is.. a beautiful and much welcomed sight The one an only ATI Catalyst Control...where you can go into settings and tweak until your lil ol hearts content.
oh and some nice OPL screen savers to boot too

ah and thank you you every one.....this is making me want to toss windows out..eh but..um I need something equivalent to some real video editing soft ware..one in which I can create wipes, graphics, an d video manipulation and near professional quality videos and it will need to be able to use the Lower thirds field..eh any one that knows video knows what I am talking about and any one that has voluntarily worked at or has worked at a tv station knows exactly what I am talking about lol.
at any rate..all is happy ..almost
